Vanilla Bean Muesli
RECIPE INFORMATION:

Serves: (Makes 2kg (4.4lb) muesli
Preparation Time: 15mins

INGREDIENTS
  • 1kg rolled oats
  • 500g amaranth
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 100g dried apricots, chopped
  • 100g sultanas
  • 100g dried apple, chopped
  • Zest of 1 orange
  • 1 vanilla bean split and centre removed
METHOD

1. Combine rolled oats, amaranth & seeds in a large bowl & mix thoroughly.

2. Add chopped apricots, apples & sultanas & mix until distributed evenly.

3. Add orange zest & centre of vanilla bean & mix through.

4. Store in airtight container. Serving Suggestions for a Healthy Breakfast
  • 1/2 cup of muesli with ⁄2 cup natural yogurt, 1 tspn yellow box honey & sliced banana and/or strawberries.
  • 1/2 cup of muesli (granola) with 1/2 cup flavoured yogurt & 1/4 cup fresh berries.
  • 1/2 cup of muesli (granola) with low fat milk & stewed apple.
  • Use as a base for Bircher muesli (see next recipe).

  • Café Style Bircher Muesli
    RECIPE INFORMATION:

    Serves: approx. 4 people
    Preparation Time: 5-10mins

    INGREDIENTS
    • 1 cup wheat free muesli (granola) (see recipe above) or sugar free natural muesli (granola)
    • 1/2 cup apple juice (100%)
    • 1/2 cup natural or natural fruit yogurt (low fat)
    • 1 fresh apple, grated or 1/2 cup unsweetened canned chopped apple
    • 1/2 cup of frozen or fresh berries
    METHOD

    1. Combine muesli (granola) with apple juice.

    2. Soak overnight.

    3. Combine soaked muesli (granola) with fresh apple, berries and yogurt, just before serving. Serving Suggestions for a Healthy Breakfast
  • Serve 1 cup of combined mix in large cereal bowls.
  • Garnish with fresh strawberries.

  • Super Smoothies
    RECIPE INFORMATION:

    Serves: 1 person
    Preparation Time: 5mins

    BASE INGREDIENTS
    • 3 tablespoons (3.6 tbsp) sugar free, low fat yogurt
    • 1/2 cup of 100% fruit juice (apple, grapefruit, or pear)
    • 1 teaspoon (1.2 tsp) flaxseed oil
    • 1 teaspoon (1.2 tsp) yellow box honey (optional)
    • 2 tablespoons (2.4 tbsp) unflavoured/vanilla protein powder (optional)
    Mix base ingredients in a blender with any of the following varieties (or make up your own).
      Banana & Pecan (or LSA: crushed linseeds, sunflowers and almonds mix)
    • 1 frozen ripe banana
    • 6 pecans (or 1 tablespoon LSA)

    • Summer Berries
    • 1 cup of frozen mixed berries (strawberries, blueberries, raspberries, blackberries etc.)

    • Vanilla & Strawberry
    • 1/2 vanilla bean
    • 1 cup of fresh strawberries

    • Banana & Blueberry
    • 1/2 frozen banana
    • 1/2 cup frozen/fresh blueberries
