Energy
Balls
|
RECIPE INFORMATION:
Yeilds: 15 - 25
Balls (depending on size)
Preparation Time:
15 – 20 mins
INGREDIENTS
- 1/2 cup finely chopped prunes
- 1/2 cup finely chopped dried apple
- 1/2 cup finely chopped dried apricots
- 1 tbsp (1.2 tbsp) yellow box honey
- 1/2 cup finely chopped pecans
- cup ground almonds
METHOD
1. Mix ingredients thoroughly
together.
2. Roll your healthy snacks into small balls.

Granola
Cake
|
RECIPE INFORMATION:
Serves: 8 – 10
people
Preparation Time:
15 mins, plus soaking
Cooking Time:
90 – 105 mins
INGREDIENTS
- 175gm (6 oz) natural muesli (granola)
- 175gm (6 oz) sultanas
- 2 tbsp (2.4 tbsp) yellow box honey
- 250ml (1 cup) 100% apple juice
- 2 cooking (green) apples, cored and grated
- 175gm (6 oz) wholemeal (whole wheat) flour
- 3 tsp (3.6 tsp) baking powder
- 11 walnut halves
METHOD
1. Preheat oven to 180°C (350°F).
2. Place the muesli (granola),
sultanas, honey and apple juice in a mixing bowl and leave to soak for
30 minutes.
3. Add the apple and sift in the
baking powder and flour.
4. Fold ingredients together.
5. Turn into a lined and greased
18cm (7 inch) round cake tin and arrange the walnuts around the edge.
6. Bake in a preheated oven for 1
1/2 – 1 3/4 hours, or until a skewer inserted into the centre comes out
clean.
7. Leave the cake in the tin for a
few minutes, then turn it out onto a wire rack to cool.

Ricotta
Cheesecake

RECIPE INFORMATION:
Serves: 8 people

INGREDIENTS
Base
- 1/2 cup brown rice flour
- 1/2 cup rolled millet
- 1/2 cup coconut
- 4 tbsp water
METHOD (BASE)
1. Preheat oven to 180°C (350°F).
2. Combine grains and coconut.
3. Mix water and press onto a
lightly greased pie plate.
4. o not bake before filling.
INGREDIENTS
Filling:
- 3 cups low fat ricotta cheese or a
combination of low fat ricotta and cottage cheese
- 4 eggs
- 3/4 cup natural yogurt
- 1/2 cup yellow box honey
- 1/3 cup yellow box honey
- Rind (zest) one lemon
- Few drops pure vanilla
- Fruit to serve
METHOD (Filling)
1. Blend cheeses, eggs, yoghurt,
honey, lemon juice & rind (zest), vanilla with an electric
beater until smooth.
2. Pour onto crust (shell) and
bake in for 15–20 minutes or until set.
3. Cool then refrigerate.
4. Once cool top with
passionfruit, strawberries and/or kiwifruit.
5. Serve your healthy snacks
immediately!
